Prosciutto di San Daniele Red Label is aged for 16 Months and characterized by its sweet, fresh and simple flavors.
As Principe’s signature item, our Prosciutto di San Daniele is so unique in many ways:
- The Beginning: we start with the animals! Principe’s proprietary farm-to-field breeding program ensures world class animal welfare standards, with the lowest impact on nature, and the healthiest impact on the animals! Our pigs (Large Whites, Landraces and Durocs) enjoy less stress, excellent nutrition and a natural environment, leading to superior quality and better tasting meat.
- The Selection: even with an excellent upbringing, not all animals qualify to be a Principe branded Prosciutto di San Daniele. In fact, close to 20% of legs are rejected by our rigid Principe Quality Control team. Principe hand selects only the finest legs available, as they mature more gradually and hence develop a well-balanced, sophisticated taste.
- The Process: our slow aging and expert salt application allow the development of lean, soft, evenly marbled meat that is sweet in taste, and lean and silky in texture. No MSG, nitrates, artificial flavors or colors are ever added!
